Healthy Gluten-Free Biscuit Recipe

WHAT TO PREPARE

Before baking, ensure that you prepare the necessary tools and equipment that you will use. 

  • 1 bowl

  • Large Tray

  • Measuring Spoons

  • Measuring Cups

  • Grater/ Shredder

  • Cookie-cutter (optional)

  • Plastic Wrap (optional)

  • Baking Sheet 

  • Wire Cooling Rack

INGREDIENTS

  • Butter (non-dairy and unsalted)

  • 125 grams vegan margarine (can be soya free)

  • 75 grams dark brown sugar

  • 225 grams gluten-free plain flour

  • 1 teaspoon baking powder

  • 1.5 teaspoon ground cinnamon

  • 1 teaspoon freshly grated ginger

  • 0.5 teaspoon freshly grated nutmeg

LET’S GET BAKING!

Once you get everything ready, carefully follow the steps below!

Step 1. Preheat your oven to 356°F 

Step 2. Grease your baking tray with butter so that your biscuits do not stick when you’re done baking. 

Step 3. Make the dough

Mix the margarine and sugar in a large bowl until the sugar dissolves, and the mixture becomes pale. Then put in the flour and spices until they are well combined. Continue mixing until it finally creates a loose dough texture in your hands.

Step 4. Cut into shape

Cut the dough into 16 even pieces, roll each piece into a ball and then place it onto the baking sheet. Flatten the dough balls with a spoon or use the glass’s bottom until they are around 1 cm deep. If you see cracked edges, then you are doing it right.

Alternative: If you choose to make your biscuits more eye-pleasing, you can play around with shapes using a cookie cutter. But instead of cutting the mixture and making a ball shape, wrap it around a plastic wrap. Then, roll it to around 1 cm deep using a rolling pin and cut it to shape using your cookie cutters.

Step 5. Bake your soon-to-be biscuits in the oven for 15-20 minutes. Do not forget to rotate your baking tray after 10 minutes to 180 degrees. 

Step 6. Remove your biscuits when they are already golden brown and cool them down to a wire rack. 

Step 7. Enjoy and serve.

ADDITIONAL TIPS

  • Store your biscuits in a sealed container to make them last for up to a week!

  • Make sure your butter is cold.

  • Tightly wrap your raw dough in a cling film and place it in the freezer to save time if you want to bake another biscuit soon.

  • Use a stand mixer for an easier process. 

  • For a crusty, buttery top, brush it with butter.

  • Ensure the biscuits touch each other while baking, so they rise properly
