Red Cabbage and Thai Tofu Rice Bowl 

If you only have half an hour to spare, then one of the fantastic rice bowl recipes you can do is this Red Cabbage and Thai Tofu Rice Bowl. This is around 508 calories per serving. 

Ingredients :

Easy cook brown rice 

Lemongrass 

Groundnut oil

Spring onions

Lime juice 

Toasted peanuts 

Lime

Light soy sauce

Small red cabbage  

Tofu cut into cubes 

Mangetout 

Basil leaves 

Red birds-eye chili 

Ginger 

Place rice, water, and lemongrass into a pan and wait for it to boil. Check if the rice is tender. From here, you can now heat the oil and stir-fry the tofu until it is golden brown. You may now add the spring onions, garlic, ginger, and chili. After one minute, you can now stir soy sauce and lime juice. When done, add your mangetout and red cabbage. 

Plate your rice bowl and put the red cabbage and tofu on top. Don’t forget your peanuts.  

Broccoli and Poached Eggs Brown Rice Bowl

Treat yourself to this hearty rice bowl, which we’re sure you and your loved ones will truly enjoy. The burst of different flavors will undoubtedly take you to a different dimension. This is one of the best rice bowl recipes you can finish in less than an hour. 

Ingredients:  

Long grain brown rice 

Water 

Salt 

Garlic cloves 

Crushed red pepper flakes 

Carrots 

Distilled white vinegar 

Reduced sodium soy sauce 

Light brown sugar 

Broccoli florets 

Vegetable oil 

Fresno chilies 

Large eggs 

Green onions 

Toasted sesame oil 

Place your rice, water, and salt in a saucepan. Cover it and wait for 40 minutes. Make sure that the liquid is absorbed by the rice. 

Mince the garlic and cut your carrots. From here, you can already mix soy sauce, brown sugar, water, and cornstarch. Once again, set aside.

You may now cut your broccoli for better cooking. Get your sesame and vegetable oil and turn to medium heat. You may now add your garlic, broccoli, red pepper flakes, and water. Cover and wait until your broccoli is tender. This should take you around three minutes. 

After this, you may now add your carrots and your soy sauce mixture. Wait for the sauce to thicken and for your carrots to be tender yet crisp. 

Next, get a medium saucepan and add water. Wait for it to boil before adding your vinegar. Crack two eggs into separate bowls. Swirl the water using a spoon and add an egg to the middle of the pan. Quickly add the second egg and wait for it to cook, depending on your preference. 

Top your rice with your broccoli mixture and poached egg. Get the chilies and green onions and plate your rice bowl.

Quick Burrito Bowl

You can make this burrito bowl in around 30 minutes. If you are craving Chipotle, this should do you good. The colors are delightful, you’d be satisfying not just your taste palate but your eyes too. 

Ingredients:

Basmati rice 

Roma tomatoes 

Black beans 

Drained whole kernel corn

Chopped Romaine lettuce 

Salsa

Avocado 

Cilantro leaves 

Vegan sour cream 

Make the Chipotle cream sauce by whisking all the ingredients and putting it aside first. Stir the salsa. Place the rice in your bowl and top it with Romaine lettuce. Don’t forget your beans, corn, and tomatoes. Put your avocado and finish it off with your cream sauce. 

Black Bean Burrito and Rice Bowl Recipe

Ingredients:

Basmati rice 

Olive oil

Rinsed black beans 

Small red pepper  

Cumin 

Finely diced onion 

Finely diced celery

Cook your rice and set it aside. Now, you can heat the oil in a large frying pan, add your onion and celery. Wait for these to soften a bit before putting the cumin, paprika, and garlic. After five minutes, you can stir the black beans, red pepper, and stock. 

Roasted Root Vegetable Bowl with Wild Rice

This extremely healthy rice bowl is perfect for anyone. This should take you an hour to prepare and cook. A bit long for some, but definitely worth it. 

Ingredients:

Wild rice 

Red wine vinegar 

Olive oil 

Salt and pepper 

Root vegetables

Dressing:

Tahini 

Lemon 

Garlic clove 

Water 

Cumin 

Salt and pepper 

Toppings:

Pomegranate arils 

Chopped kale

Prepare your rice for about forty minutes. Make sure that it is tender. Drain the rice and add olive oil and vinegar. Add salt and pepper to taste. 

While waiting for the rice, you can preheat the oven to 400ºF. On a baking sheet, place your root vegetables and drizzle them with olive oil. Season to taste and roast it for about 45 minutes. Stir it every fifteen minutes and wait for the edges to turn brown. 

As for the dressing, just add all other ingredients to a small bowl. Whisk and wait for it to be smooth. If you wish to change the texture, you may add water.
